I spent most of the forenoon cooking...which is a rare thing for me to do these days due to the heat. I decided I've eaten enough PB&J sandwiches and yogurts! A hot dish - even in the summertime - is good once in awhile.
My first dish was a casserole of scalloped potatoes with onions and garlic. My second dish was a little more complicated as it was made from scratch. (I can't compete with Hungry Jack when it comes to making scalloped potatoes!!). The spaghetti sauce was very easy to make and extremely healthy. First, you either make a sauce from scratch....which takes a little longer.....or purchase one of the excellent sauces at the grocery store. Put the sauce into a heavy saucepan (so it won't burn), to simmer. Meanwhile, steam a large bag of frozen mixed vegetables. Depending on how many vegetables you want in the sauce...gauge the amount of sauce to use. Simply add the steamed vegetables to the sauce and stir in. I let mine simmer about 15 minutes to make sure the tastes were well blended. For people who have children who refuse to eat vegetables...like some of my friends and family do....put the steamed veggies into a blender and puree them. Then add the veggie puree into the spaghetti sauce. I guarantee you your kids will not know there are veggies in the sauce..unless they saw you fixing them. What kid doesn't like spaghetti??? This sauce could be used on any type of pasta. I plan to have elbow macaroni with the sauce tonight. Spaghetti sauce is a very versatile item in the food group pyramid and I have used it on or in many dishes over the years.

P.S. I had a peach fresh from Pam's peach tree this morning on my cereal.....yum, yum.

Mmmm.... You've inspired me. Luckily my kids love veggies, so no need to hide them. I'll be posting some food pics to my blog in a while. Be sure to check it out!
